I thought I knew most of the foods from the West Indies, but I am again surprised. Breakfast in Trinidad is a treat because of something called 'doubles'. Doubles are fast food; Trinidadian style. You can get them from street vendors all over the place. I put my trust in my hosts to take me to a street vendor who would not give me e-coli, and they did a fine job.

Doubles consist of two pieces of flat bread called 'bara'. They are filled with a sauce made from chickpeas, curry, peppers, and other local spices. There are two pieces of bread and you fold them around the filling and eat them like a taco. (Hence, the name)

They make an fantastic breakfast. They're very cheap, can be found anywhere, low fat, and have a magnificient taste. This island continues to surprise. I am seriously thinking about finding a recipe and posting it. I enjoyed them that much.
